Maybe you’ve heard of a potato chip PB&J. Or, we’ve even ventured to sprinkle our own tasty chips on a hot dog or two. But, are you ready to up your grilled cheese game? We’re not talking American cheese and processed white bread. This is a way, way better grilled cheese.

How do you make a grilled cheese way better? Nacho Cheese Way Better Snacks, of course.

First, let’s talk bread. This is not the ingredient to skim over and grab whatever is on the shelf. At the end of the day, grilled cheese will always be about two key ingredients: cheese and bread. So, both need to be the best of the best. Maybe that means a sourdough made from your great grandmother’s classic sourdough starter that has lasted for generations. Maybe it’s a loaf packed with sprouted grains and seeds from your local baker. Whatever it is: make it super delicious.

Then pick out your cheese. We’re keeping this one pretty simple: it’s all about the cheddar. A medium sharp cheddar will be perfect to shine in the sandwich but let the other ingredients stand out, too. But, we won’t judge you if you go super bold with an extra sharp aged cheddar. Some days, you just gotta go for the gold.

There is no way better beer food than this crunchy, melty nacho grilled cheese.

All that’s left is a sliced avocado and the shining, crunchy star: Way Better Snacks Nacho Cheese tortilla chips. Nacho Grilled Cheese

Ingredients

2 sliced of your favorite bread

½ Tbsp butter

2/3 cup shredded cheddar cheese

½ avocado, sliced into 1/8” thick slices

1 handful of Nacho Cheese Whole Grain Corn Tortilla Chips (plus more for serving)

Preparation

Heat a heavy skillet over medium-low heat.

Butter one side of each piece of bread, and place them both butter-side-down in the skillet

Divide the cheese into three portions, and set one aside. Use the other two to cover both upward-facing sides of the bread.

Layer the avocado on top of the cheese on one slice of bread, and layer the chips (can be whole or crushed) on the other slice. Sprinkle the remaining 1/3 cup of cheese evenly over both sides.

Cook for a few minutes over medium-low heat to begin melting the cheese, then use a spatula to carefully join the two pieces together as sandwich. Continue cooking until both sides are golden-brown and the cheese is fully melted (it’s the glue, so make sure the heat is not too high—we want to make sure the cheese can fully melt before the bread is too dark!).

Serve with more chips and beer!
