Bursting with crisp bacon, juicy tomatoes and creamy avocados our Chicken, Tomato, Bacon & Avocado Salad has lots of flavor. Served with a salad and Way Better Snacks Sprouted Barley Mustard & Cheddar Crackers it makes a quick and easy meal on busy weeknights. We like to serve this salad in lettuce wraps, scooped up with our crunchy crackers or simply piled up on a bed of greens. It’s chicken salad made Way Better!
Chicken, Tomato, Bacon & Avocado Salad
3 tablespoons olive oil
1 1/2 tablespoon apple cider vinegar
1 garlic clove, minced
1 teaspoon Dijon mustard
1 teaspoon dried Italian seasoning
salt and pepper, to taste
2 cooked boneless, skinless chicken breasts, diced
4 slices bacon, cooked and chopped
2 plum tomatoes, diced
2 avocados, pitted and diced
1/4 cup thinly sliced green onions
Whisk together olive oil, vinegar, garlic, mustard, and Italian seasoning until creamy and well blended. Season with salt and pepper to taste. Set aside.
In a mixing bowl toss together diced chicken, bacon and tomatoes. Drizzle with olive oil mixture and mix. Add avocados and green onions. Being careful to not mash avocados, gently mix salad until avocado and green onions are evenly distributed.
Serve imediately with Way Better Snacks Sprouted Barley Mustard & Cheddar Crackers.
