Huevos Rancheros is a hearty breakfast dish that can also be served for lunch or dinner. We’ve made our Huevos way better by serving them with our sprouted tortilla chips and a generous serving of heart-healthy vegetables. Topped with your favorite salsa and chopped avocados, Veggie Lover Huevos Ranchero is a flavorful start to the day!
Veggie Lover Huevos Ranchero
Ingredients
1 1/2 tablespoons olive or coconut oil, divided
1 medium sweet yellow onion, thinly sliced
1 green bell pepper, cored and thinly sliced
1/2 red bell pepper, cored and thinly sliced
1/2 yellow bell pepper, cored and thinly sliced
1 teaspoon minced garlic
1 cup lightly packed fresh spinach or kale, chopped
2 eggs
1/4 cup shredded cheese, optional
salt and pepper, to taste
2 servings Way Better Snacks Black Bean Tortilla Chips
1/3 cup salsa
1 avocado, pitted and chopped
Preparation
Heat half of the oil in a skillet over medium-high heat. Add onions and sauté until they are translucent.
Add peppers to pan and sauté until tender. Add garlic and spinach. Continue to cook, stirring vegetables until greens are wilted. Season with salt and pepper. Divide vegetables onto two plates. Cover to keep warm.
Add remaining oil to skillet and cook eggs in your preferred style, sprinkling cheese on eggs, if using. When egg is set, place one onto each plate on vegetables. Top with salsa and avocados. Tuck a serving of Way Better Black Bean Tortilla Chips around each serving. Enjoy!
