Slow Cooker White Bean & Chicken Chili
Ingredients
2 pounds chopped boneless, skinless chicken thighs or breasts
4 cups chicken broth
2 – 18.75 oz. cans tomatillos, drained and chopped
2 – 16 oz. cans fire roasted diced tomatoes
2 – 7 ounce cans diced green chiles, drained
2 onions, chopped
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon ground coriander
½ teaspoon ground cumin
2 -15 oz. cans white navy beans, drained and rinsed
2 – 15 oz. cans cannellini beans, drained and rinsed
10 oz. fresh or frozen corn
1/2 cup chopped fresh cilantro
salt to taste
ground black pepper to taste
To serve: Way Better Snacks Unbeatable Blues Corn Tortilla Chips, sour cream and fresh diced cilantro, as desired
Preparation
Put chicken, broth, tomatillos, tomatoes, chiles, onions, garlic, oregano, coriander, cumin, beans and corn into 6 quart crockpot. Cover and cook on low for 6-8 hours.
Before serving, stir in fresh cilantro. Taste and add salt and pepper to taste. Stir before serving with Way Better Snacks Unbeatable Blues Corn Tortilla Chips, sour cream and additional fresh cilantro.
