Ingredients

6 Apples (we used Jonagold)

2 tablespoons butter

1/4 cup brown sugar

For the crumble topping:

1/2 cup Gingersnap tortilla chips (crushed)

1/2 cup flour

1/3 cup brown sugar

4 tablespoons butter, chilled and cut into chunks

Preparation

Preheat the oven to 400.

Prepare your crumble topping by combining the crushed chips, flour, and brown sugar in a small bowl. With your hands, mix in the chilled butter cubes until a crumbly consistency. Set aside while you prep the apples.

Two of the apples will add to the stuffed apple goodness of your crisps. Peel those two apples and cut into chunks for cooking. Cut the tops off of the remaining 4 apples and carefully scoop out most of the apples’ centers. You want to leave about a half inch on all sides to keep your apple sturdy in the oven. Avoiding the tough core and seeds, save the remaining apple for cooking.

Core the apples in preparation for stuffing. Leave about a half an inch on all sides.

Add 4 tablespoons of butter, apple chunks, and 1/3 cup of brown sugar to a sauce pan on medium heat. Stir frequently and let cook for 5-7 minutes until the apples begin to soften. Remove from heat.

Setup the four hollowed out apples in a shallow baking dish and fill with the cooked apple. Top generously with crumble topping and pop into the oven, uncovered for 18-20 minutes until cooked through and apple has softened.

Serve warm from the oven with a scoop of your favorite ice cream or gelato and a drizzle of caramel sauce (if you’re feeling fancy!).
