We’re spreading the joy this holiday season with this cashew spread. You might not believe it when you dig into this light and bright dip, but this will please every palette and every diet: vegan, raw, dairy free, gluten free, and delicious? It’s almost too good to be true. But, good news for us: this 5-ingredient delight is very much real. While adapting your go-to holiday menu to appease guests with various dietary restrictions can seem like an inconvenience, part of being a great and gracious host is accommodating everybody at your table. We’re not saying that everyone needs to include a second tofurkey in your spread (but, it would be awesome if you did!). You can be creative and easily please a wide range of tastes with a few easy tips. Here are three easy tips to host a way better, way inclusive holiday meal. 1. Include an appetizer (or two) without cheese: while accommodating vegan guests can be one of the more challenging tasks, there are great appetizers where no one will miss the cheese (even aside from this one). Think simple: hummus and bean dips are all naturally dairy free. They make for easy dips that everyone will enjoy sans cheese. 2. Have (delicious) non-alcoholic beverages as an option: whether a few of your guests are non-drinkers, pregnant, or just taking a break from a rough outing the night before, be sure to include N/A options that are just as festive as your signature cocktail. Omit the meat here and there: while the soy-turkey isn’t necessary, some options for your vegetarian friends are expected. And, we mean more than a salad. Making stuffing? Cashew and Pineapple Spread
Ingredients
1 cup of cashews soaked in water overnight
1 lemon
2 green onions, roughly chopped
1 cup fresh, diced pineapple*
Salt and pepper

*If you don’t have fresh pineapple, you can used canned pineapple, just make sure that it doesn’t have any added sugars.
Preparation
In a food processor, add the green onions and the juice from the lemon. Pulse a couple of times so the green onions turn into a green paste. Add the cashews to the food processor and pulse again. If needed, add water to the mix to help the processor, one tablespoon at a time to prevent you from adding more water that is needed
Continue pulsing the food processor until you get a hummus-like consistency. It could take from two to three minutes depending on your food processor. Once you get the desired consistency, pour the mix into a bowl.
Drain the pineapple to removed any extra liquid. Add the pineapple to the cashew mix and stir very gently, just for the flavors to combine. Serve with finely chopped green onions and your favorite Way Better chips.
