This is the time of year zucchini begins to appear in gardens and farmer’s markets.
If you have one of these prolific plants in your garden, you know how they grow and grow, blessing you with squash after squash. While tasty, it is easy to run out of ideas on how to fix zucchini in different ways when faced with so many summer squash. For a change of pace, whip up a batch of Baked Zucchini Fries the next time you have an abundance of zucchini.
Sliced zucchini is dipped into a seasoned coating of crushed Simply Sunny Multi-Grain Tortilla Chips and baked, giving a crunchy coating to the squash. The resulting dish is crisp on the outside and tender inside, just right for serving along side grilled burgers to round out your summer meal. Baked Zucchini Sticks
Ingredients
3 medium zucchini, sliced into 3″ x 1/2″ sticks
2 teaspoons salt
1 large egg white
2/3 cup finely crushed Simply Sunny Multi-Grain Tortilla Chips
1/3 cup all-purpose flour or your favorite gluten free flour blend
2 tbsp grated parmesan or dairy free alternative
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
Freshly ground black pepper, to taste
Oil, for baking
Preparation
In a bowl, toss the zucchini sticks with salt. Place salted zucchini into a colander over a bowl or plate and allow moisture to drain for at least 20 minutes, up to an hour. This step gives you a crisper zucchini fry and keeps the dish from getting soggy. After at least 20 minutes, rinse zucchini and pat the sticks dry with a clean kitchen or paper towel. Alternatively, spin the sticks in a salad spinner after rinsing to remove excess moisture.
In a small bowl, beat egg white until frothy. Set aside. In a larger bowl stir together finely crushed Simply Sunny Multi-Grain Tortilla Chips, flour, parmesan, basil, oregano, thyme and pepper until well blended.
Preheat oven to 400 degrees F. Oil a baking sheet and set aside.
Working with only a few zucchini sticks at a time, dip zucchini into egg white then into tortilla crumb mixture, being sure to coat each side. Place the coated zucchini in a single layer on baking sheet. Spray or drizzle a small amount of oil on fries before baking.
Bake zucchini fries at 400 degrees F for about 20-25 minutes, or until golden brown. Serve plain or with your favorite dipping sauce.
