We’re so excited about our new sprouted barley crackers! Barley is one of the oldest cultivated grains-highest in fiber of any whole grain and packed with antioxidants, vitamins and minerals essential to health. Not only that, but it has a delicious, rich, nutty flavor. Oh, and our crackers are DELICIOUS! To compliment the zesty flavor of our Black Bean & Salsa flavor, we created a dip with black beans, tangy goat cheese, jalapeños and cumin to get your taste buds jumping.
Black Bean and Goat Cheese Dip
14.4 ounce can black beans, rinsed and drained well
½ cup chèvre goat cheese
2 1/2 tablespoons pickled jalapeños
2 tablespoons lemon juice
2 tablespoons olive oil
1 clove garlic, finely minced
3/4 teaspoon ground cumin
½ teaspoon ground coriander
1/2 teaspoon salt, or to taste
1/2 teaspoon ground black pepper, or to taste
To serve: Way Better Snacks Black Bean & Salsa Sprouted Barley Crackers and sliced vegetables
In a food processor, combine all dip ingredients and blend until smooth. Cover and chill one hour for flavors to combine.
Before serving, taste and add more salt and pepper if needed.
